ALLETZ (Pons-Augustin)]. The modern Albert, or New proven and legal secrets. Paris, widow Duchesne, 1777. In-12, marbled basane, smooth spine decorated, red edges (Binding of the period). xxiv and 312 pp. This famous work, written by the lawyer Alletz (1703-1785) and published anonymously, for the first time in 1768, is presented in the form of a dictionary. Divided into three parts concerning health, useful things and pure pleasure, it offers various recipes related to cooking and eating. One finds in the second part (p. 97 to 236) "the way to make carrot jam, chocolate cream, meat jelly", to "preserve fresh game from the beginning of Lent until Easter", grapes and all kinds of fruits, to "cook vegetables without water to keep all their taste...". (Vicar). The third part opens with a chapter devoted to liqueurs, ice creams, creams... On f. A, contemporary stamp: Rouen 1777. Binding rubbed, upper cover missing, one jaw split, corners dull.
