GILLIERS (Joseph). Le Cannameliste français, ou Nouvelle instruction pour ceux qui désirent d'apprendre l'office, rédigé en forme de dictionnaire. Nancy, Printed by Abel-Denis Cusson; Lunéville, by the author, 1751. In-4, marbled calf, triple cold fillet, ornamented spine, red morocco title page, red edges, modern half red morocco folder with cover, slipcase covered with the same (Period binding). Frontispiece, title, 1 epistle, iii pp. 238 pp. 13 pp. (table), 13 folding plates. First edition of one of the most famous gastronomic works of the 18th century. Cook in France at Lunéville, for the king of Poland Stanislas I Leszczynski, Gilliers intended this work for the officers of the Lorraine court. The book evokes the different dishes based on cannamelle or sugar cane, describes many glazed or candied fruits, and other recipes for sweets: jams, pastes, cookies, candies, nougats. He also gives many technical explanations (the pyramid of fruits or chocolate imps). Remarkable from an artistic point of view, it is illustrated with a beautiful title-frontispiece, a vignette with the arms of the Duke of Tenczin, at the head of the dedication, engraved by Colin, and 13 magnificent folding plates, engraved by the Lorraine artist JCF Lotha (Jean-Charles François Lotharingien) after Philippe Du Puy, the King's ordinary painter, which present marvels of goldsmithery and glassware: especially with arabesque decorations, chinoiseries, vases, molds, goblets, glasses, models of the most appropriate furniture for the service, tables cut out to circulate...; these engravings testify to the refinement of the court of Lorraine. Printed in small numbers, the work was reprinted twice in the same year, and the original 1751 edition was put back on sale in Paris in 1768, with a renewed title. Copy having belonged to Marie-Antoinette Dauphine, bearing her bookplate engraved by Eisen (Bibliothèque de Me la Dauphine n° 1). Restorations to the binding, some spotting. Few stains.
