GILLIERS (Joseph). The French Cannamelist. Nancy, Jean-Baptiste-Hiacinthe Leclerc; Paris, Merlin, 1768. In-4, glazed blond calf, triple gilt fillet and interior fillet with corner fleurons, spine decorated, red morocco title-piece and gilt numeral, interior roulette, red edges (Simier relieur du Roi). Frontispiece, title, 1 epistle, iii pp. 238 pp. 13 pp. (table), 13 folding plates. Second edition of one of the most famous treaties on confectionery. Cook in France at Lunéville, for the king of Poland Stanislas I Leszczynski, Gilliers intended this work for the officers of the court of Lorraine. This edition is in fact the original edition of Nancy (1751), put back on sale in Paris, with a renewed title: it is absolutely identical to the original edition. The book evokes the different dishes based on cannamelle or sugar cane, describes many glazed or candied fruits, and other recipes for sweets: jams, pastes, cookies, candies, nougats. He also gives many technical explanations (the pyramid of fruits or chocolate devils). Remarkable from an artistic point of view, it is illustrated with a beautiful title-frontispiece, a vignette with the arms of the Duke of Tenczin, at the head of the dedication, engraved by Colin, and 13 magnificent folding plates, engraved by the Lorraine artist JCF Lotha (Jean-Charles François Lotharingien) after Philippe Du Puy, the King's ordinary painter, which present marvels of goldsmithery and glassware: especially with arabesque decorations, chinoiseries, vases, molds, goblets, glasses, models of the most appropriate furniture for the service, tables cut out to circulate...; these engravings testify to the refinement of the Lorraine court. A copy from the Lord Seymour's library, with his mosaic figure on the back. Some foxing and stains. Joints restored and cracked, hinges weak (first plate ready to detach).
