LA VARENNE (François-Pierre de)]. L'École des ragouts, ou Le Chef d'oeuvre du cuisinier, du pâtissier, et du confiturier. Lyon, Jacques Canier and Fleury Martin, 1668. In-12, vellum, title in ink on the spine, red speckled edges (Binding of the period). 458 pp, (4) ff. First edition under this title of this collection, bringing together three works that testify to the revival of French cooking in the 17th century: in a continuous pagination, one finds Le Cuisinier méthodique, Le Pâtissier françois, Le Confiturier françois (with La Manière de plier toute sorte de linge de table). They had already appeared together in 1662, Paris, Jean Promé. Some foxing. Angular staining to the first few leaves, corner of the title restored with lack. The frontispiece is a woodcut, pasted on the flyleaf, representing a cook cutting a rabbit. Worn vellum. Vicaire, 503 - unknown in other bibliographies.
