LUNE (Pierre de). Le Nouveau et parfaitement cuisinier où il es traitté de la vraie méthode pour apprester toutes sortes de viandes, gibbier, volatiles, poissons, tant de mere que d'eau douce. Fourth edition of this book containing more than 900 recipes, first published in 1656. Pierre de Lune was probably a cook for the Duchess of Orleans, then the Duke of Rohan, before serving various lords, including the president of the Court of Aides, Jacques Amelot de Mauregard. With this Cook (1656) and the New and Perfect Master of the Hotel (1662), he is one of the inventors of the new cuisine in the 17th century. The book is divided into four seasons to follow the calendar of supplies (and no longer according to the calendar of liturgical obligations in food), but as traditionally, the recipes are listed according to the order of services.
