"Fifty years before Pasteur's work (the method of pasteurization), Appert perfected this process which consisted in releasing the oxygen from the substances by boiling them at the right point of their cooking, and then enclosing them in tin cans, heated in a water bath and then hermetically closed" (Oberlé).
