Head of the collection of this monthly professional periodical, founded by the pastry cooks Fernand Barthélémy and Pierre Lacam (1836-1902, famous craftsman who was also a bibliophile). Its publication continued until 1914. The volume gathers all the issues published from September 1st 1890 to December 1st 1892. Exceptional copy of one of the authors, bearing this letter from Lacam to Barthélémy on the first endpaper, dated Vincennes, August 15, 1892: "My compliments to my friend Barthélémy for his courage in creating this difficult work. He succeeded. So much the better." Minimal foxing. Damage to the upper cover. Binding slightly rubbed. Absent from specialized bibliographies.
