Lawyer in Bugey and nephew of Brillat-Savarin, Lucien Tendret (1825-1896) delivers in this collection of recipes, bugistes and bourgeois, the secrets of the walnut sâlé, the lavaret, the turnip of Parves, the poulardes of Bresse, the cake of blond livers... and recommends the abundant use of truffles of Bugey.
