COUSIN D'AVALLON]. - BOREL. New dictionary of cooking, service and pastry. Paris, Corbet aîné, 1825. In-12, green half-basane, spine with ornate nerves, marbled edges (Modern binding). Faux-title, 4 folding plates, title, IV pp. 654 pp. First edition of this dictionary, whose recipes are based on those of Beauvilliers, Archambaut, Fouret, Viard, Carême, Thomas, Lebeau, Machet... It is enriched with modern discoveries and also contains a "notice on wines, according to Julien's procedures". It was published, under the pseudonym Borel, by the writer Charles Cousin d'Avallon (1769- 1840); under the pseudonym A. T. Raimbault, he also published Le Parfait Cuisinier (1810) and numerous works (Gastronomiana, 1809; La Nouvelle cuisinière bourgeoise, 1816; Le Cuisinier moderne, 1836). This man of mouth died without fortune and of hunger. Freckles, browned leaves. Spine faded. Vicar, 105 - not in Bitting.
