FAVRE (Joseph). Universal dictionary of cooking and food hygiene. Paris, Librairie-Imprimerie des Halles et de la Bourse de commerce s.d. (1894). 4 vol. in-4, blue half-chagrin, spine ribbed decorated (Binding of the publisher). First edition of "the largest culinary encyclopedia ever made" (Oberlé) which gathers more than 7000 articles and 6000 recipes, illustrated with 1200 engraved figures in the text, 4 colored plates, and several figures out of text. First published in issues from 1883, this magnificent work, official organ of the Academy of Cuisine founded the same year by Favre himself, is dedicated to the city of Paris. Its publication testifies to a concern for the democratization of the culinary art. The Swiss cook Joseph Favre (1849-1903) is the former chef of the houses Riche and Chevet. Volumes I and II contain prefaces by Charles Monselet and Fulbert-Dumonteil, the last volume includes a presentation by Eugène Krantz of the Imperial House of Russia and its service staff under Alexander III.
