This treatise, a complement to the Livre de Cuisine, is divided into two parts: the preparations and the large pieces and detached entremets. In the preliminary considerations, the author addresses young pastry chefs (terms, the oven, cooking). It is illustrated with a portrait of the author, officer of the Jokey-Club of Paris, 137 woodcuts in the text and 10 chromolithographs out of text (croustades, cakes, timbales, pieces mounted...), after paintings and drawings of E.
